One die is flat
A single d6 gives each face 16.67 per cent. A d20 gives each number 5 per cent, so rolling 15 or better is exactly 30 per cent, and a d100 gives each number 1 per cent. Every single die is even like this. Totals are where it stops being even.

Thirty-six combinations in total. Seven can be made six ways and twelve only one, so 7 is six times as likely as 12. Totals of 10 or more come up 16.67 per cent of the time between them. If you want a level number from 1 to 12, roll a d12 or open 1 to 12: 2d6 piles up in the middle and can never produce 1.
More dice, sharper peak
Three dice have 216 combinations, and a quarter of them total 10 or 11. That is the whole point of 3d6 for character stats: extremes are rare on purpose, and 3 or 18 each turn up once in 216 rolls. By six dice the total is almost always somewhere in the twenties.
Chasing one number
Rolling more dice does not make a particular face certain, only likely. Four dice carry a 51.8 per cent chance of showing at least one 6, and six dice still only reach 66.5 per cent. A third of the time, six dice produce no 6 at all. The common house method of rolling 4d6 and dropping the lowest die averages 12.24, against 10.5 for a straight 3d6, which is why it is used to make stronger characters.
